Sautéing Onions

1/4 cup chopped onion
3 tablespoons butter
3 tablespoons flour

Stock

6 cups chicken stock
2 parsley sprigs
1/3 bay leaf
1/8 teaspoon thyme
3/4 to 1 pound mushrooms

Cooking Mushrooms

2 tablespoons butter
1/4 teaspoon salt
1 teaspoon lemon juice

Cooking Soup

2 eggs yolks
1/2 to 3/4 cup whipping cream
1 to 3 tablespoons softened butter
