VEGAN THAI RAMEN
1 tbsp vegetable oil
3 garlic cloves minced
1" ginger finely grated
2 shallots sliced
4 cups vegetable broth
2 cups coconut milk
2 tbsp soy sauce
1 tbsp maple syrup
1/2 cup creamy peanut butter
1 lime juiced
1 tbsp chili flakes
1 tbsp mushroom powder
1 1/2 tbsp sesame oil
1 pack ramen noodle uncooked
1 block firm tofu, cubed
Toppings:
Cilantro
Lime wedges
Toasted peanuts
Shredded nori sheets
Green onions
RICE PAPER DUMPLING
Olive oil
Shredded carrots
Shredded cabbage
Diced shiitake mushrooms
Ginger grated
Onions sliced
Onion spring
Salt
UNMEAT giniling (This is my vegan option, but use anything of your liking! Can use ground tofu or your choice of meat)
For wrap:
Rice paper sheets
For sauce:
1.5 tbps coconut aminos (soy sauce)
1 tbps rice vinegar
2 tsp sesame oil
1/4 tsp sriracha sauce
Sesame seeds
Spring onions or coriander
