Rice bread
Pan 22x10x height 9.5 (cm)
- Poolish
Rice flour for bread 100g
Water 100ml (lukewarm)
Instant dry yeast 1/4 tsp (1.25g)

- Main dough
Rice flour for bread 270g
Salt 3g
Honey 10g (1 tbsp)
Water 140ml (10-20ml for extra)
Poolish whole
Black sesame seeds 2 Tbsp (fried and lightly ground)


1. First, prepare the poolish. Mix all the poolish ingredients well, cover the top and leave for about 2 hours at room temperature. (Until the volume doubles / Time may vary depending on the temperature of the working environment)
2. Prepare the main dough. Put all ingredients except black sesame in a large bowl. (*Adjust the consistency of the dough by extra water) When the dough is lumped together, move it to the workbench and start kneading. Add black sesame seeds in the middle of the kneading process and knead it evenly. (Hand kneading time about for 10-12 minutes)
3. Cover the top and let it rest at room temperature for 30 minutes.
4. Divide the dough into 2 pieces. Cover the top and let it rest for 10 minutes.
5. After 10 minutes, shape the dough to fit the bread pan.
6. Let it rise until the dough rises to about 1,5-2 times in a warm place. (about 1 hour)
7. Bake in an oven preheated to 170℃ (338℉) for 20-25 minutes.
8. Allow it to cool completely before cut it.
