Hello Hello Everyone!
Just as our bread recipe, we have gluten free rolls! I love rolls and am so sad I can't have them anymore. I promise this recipe will not disappoint for the holidays. RECIPE & INGREDIENTS:

1 1/2 cup warm water at 100-110 F
3 1/3 cup gluten free all purpose flour (bobs red mill or King Arthur)
2 1/4 teaspoon RAPID rise yeast (NOT ACTIVE)
1/2 cup nonfat dry milk powder (make sure it is gluten free)
2 tablespoons Xanthum Gum
2 tablespoons sugar
2 teaspoons lemon juice
2 teaspoons salt and baking powder
2 eggs
1 egg yolk
6 tablespoon softened room temperature butter

STEPS:

Combine warm water, lemon juice, one egg and one egg yolk together.
In a different bowl add gluten free flour, rapid rise yeast, milk powder, sugar, salt, baking powder, and xathum gum together
Once dry ingredients are fixed together, slowly add the wet ingredients.
Mix until texture starts to come together, then add butter one tablespoon at a time. (let butter mix a little before adding a new piece)
Once texture of dough is stick, turn off mixer and wet hands.
To a greased 9 inch cake pan, roll dough into balls (size is up to you)
Make sure to keep wetting hands if they become dry and dough starts to stick again.
Once all dough is in the pan, cover and put in a warm area to proof for 1 hour, once proofed, add egg and salt to top of rolls before putting them into the oven.
When dough as finished proofing, put in 375 degree oven for 35-40 minutes (make sure rack is in the middle).
They should be golden brown when done, take them out and let them cool for about an hour.
