Hello, welcome to:
Flavors of Spain;
In the Southwest.

On this occasion I want to show you how to make Gazpacho with red chile Mirasol!

This is what you need:

5 ea. Ripe tomatoes
1/2 ea. Green bell pepper
2 ea. Dry chile Mirasol
1 ea. Clove garlic
4 oz. E.V.O.O.
1 Tbs. White vinegar
3 oz. Day-old bread
8 oz. Cold water
Salt

Rough chop vegetables and bread
Simmer dry chiles for about 5 minutes
Remove pulp from chiles
Add vegetables, bread, chile pulp, vinegar, water and salt to blender
While blending drizzle E.V.O.O.
Blend until very smooth
Adjust seasoning
Chill for at least 2 hours
Serve in cold bowls
