** Ingredients ( For 2-4 people): **
1 Bag egg tofu (245g) / 1 Sac de tofu aux œufs (245g)
*Egg tofu is available in all major Asian supermarkets. Many brands are similar, so choose one that suits you.

3 Eggs (200ml) / 3 Œufs (200ml)
Salt 1/4Tsp / Sel 1/4Tsp
Warm water 50°C 300ml / Eau tiède 50°C 300ml
*The ratio of egg to warm water is 1: 1.5

Marinate shrimps:
12 White shrimps / 12 Crevettes blanches
Salt 1/4Tsp / Sel 1/4Tsp
Rice wine 1/2Tsp / Vin de riz 1/2Tsp
White pepper / Poivre blanc

Sweet soy sauce:
Green onion (white part) 15g / Oignon vert (partie blanche) 15g
Peanut oil 1Tbsp / Huile d’arachide 1Tbsp
Sugar 1Tsp / Sucre 1Tsp
Light soy sauce 2Tbsp / Sauce soya légère 2Tbsp
Water 2Tbsp / Eau 2Tbsp
Sesame oil 1Tsp / Huile de sésame 1Tsp

*The ratio of light soy sauce to water is 1: 1.
