🟢材料:
排骨 600 克
豆豉 20 克
蒜頭 3 粒
辣椒 2 隻
薑 1 片
澱粉 1 湯匙
紹興酒 1 茶匙
豉油(或蠔油)1 茶匙
糖 1 茶匙
老抽 1 茶匙
鹽 1/2 茶匙
胡椒粉 少許
油 適量

🟢做法:
1️⃣ 排骨洗淨吸乾水,加入胡椒粉、薑米、1/2 茶匙鹽、1 茶匙糖、1 茶匙紹興酒、1 茶匙豉油(或蠔油)、1 茶匙老抽、1 湯匙澱粉及適量油拌勻。
2️⃣ 把爆香蒜頭豆豉,放入排骨中拌勻醃製 15 分鐘。
3️⃣ 將排骨放入蒸盤中,放入辣椒,大火蒸 10 分鐘。

🟢Ingredients:
Pork ribs - 600g
Fermented black beans - 20g
Garlic - 3 cloves
Chili peppers - 2
Ginger - 1 slice
Cornstarch - 1 tablespoon
Shaoxing wine - 1 teaspoon
Soy sauce (or oyster sauce) - 1 teaspoon
Sugar - 1 teaspoon
Dark soy sauce - 1 teaspoon
Salt - 1/2 teaspoon
White pepper powder - A pinch
Oil - As needed

🟢Cooking Directions:
1️⃣ Wash the pork ribs and pat them dry. Mix them with white pepper powder, minced ginger, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of Shaoxing wine, 1 teaspoon of soy sauce (or oyster sauce), 1 teaspoon of dark soy sauce, 1 tablespoon of cornstarch, and an adequate amount of oil.
2️⃣ Sauté minced garlic and fermented black beans until fragrant. Add the marinated pork ribs and mix well. Marinate for 15 minutes.
3️⃣ Place the pork ribs in a steaming plate. Add chili peppers. Steam over high heat for 10 minutes.
