Recipe: Sesame Broccoli Salad

Ingredients:

2 crowns of broccoli, trimmed into small florets
1 tablespoon sesame seeds
8 cups water (for blanching)
1.5 tablespoons kosher salt (for blanching)
1.5 tablespoons soy sauce
1.5 tablespoons sesame oil
1 carrot, peeled into strips
5-6 thin slices of red onion
Instructions:

In a non-stick skillet over medium heat, toast sesame seeds until golden and fragrant (about 3-4 minutes). Set aside.
Bring 8 cups of salted water to a simmer. Add broccoli florets and blanch for 3 minutes.
While broccoli is blanching, mix soy sauce and sesame oil in a small bowl.
Drain the broccoli and transfer it to a mixing bowl.
Add toasted sesame seeds, soy sauce, sesame oil mixture, carrot strips, and red onion slices to the bowl with broccoli.
Toss everything together until well combined.
Serve immediately or refrigerate for later use.
