Hey guys! Today we are making homemade birria quesa tacos with consome! So good & so juicy! You are going to be in the kitchen for hot minute making this so make sure you eat beforehand lol.

Ingredients:
1 lb beef shanks
3lbs chuck roast
4 cups water
1 quart beef broth
Corn tortillas (this recipe makes about 20 tacos)
2 tbsp olive oil
1 cup chipotle peppers in adobo sauce
14.5 oz can petite diced tomatoes
2 Mulato chilies
3 costeno chilies
4 Guajillo chiles
3 Chile de arbor
3-4 limes
6 bay leaves
4 garlic cloves, sliced
1 medium onion, small diced
3 cups Oaxaca cheese, shredded
1/2 tsp allspice
3 cinnamon sticks
1 tbsp pink Himalayan salt or kosher salt
1 tbsp onion powder
1 tsp dried oregano
1 tsp ground coriander
1/2 tsp ground thyme
1/2 tsp smoked paprika
1 tsp ground ginger
1/2 tsp black pepper
Salt and smoked paprika to season the beef
