We're giving the stage to the 'youngsters' in this diary episode - it's great when we find folks who take inspiration from the Pasta Grannies. Paolo has watched every single episode on this channel! He makes 12 egg doughs for fun, if you want to try, start with 2 eggs:
200g 00 or plain flour and 2 eggs plus a half teaspoon of olive oil
celery stick (if it has leaves, use them), onion, carrot, 400g very good quality sausage meat, 200g peas, 50ml red wine, 300ml passata, salt, pepper.
