▶ Materials ◀ Use 25x25x4cm square pan No. 5
🔥Preheat to 170℃ for 15 minutes, then bake at 160℃ for 30-31 minutes🔥


✏ Chocolate sponge cake
270g eggs ( 5 large eggs. measure the weight rather than the number of eggs)
120g sugar
1.5g salt (you can add slightly more than 1g)
25g honey
110g cake flour
2g baking powder
20g cocoa powder
65g milk
40g oil (I used canola oil. You can use any oil except olive oil, which has a strong scent.)


✏ cream
350g heavy whipping cream
70g mascarpone cheese (If you don't have it, you can substitute it with heavy whipping cream. However, if you add mascarpone cheese, the milk tastes much more and tastes better. If you have condensed milk, you can reduce the sugar a little and add condensed milk.)
45g sugar


✏ Ganache
80g dark couverture chocolate
80g heavy whipping cream


✏ Ganache for decoration
15g white couverture chocolate
15g heavy whipping cream


✏ Cake syrup
30g sugar
60g hot water
