Hey family!!! In today's video we're starting out with some Country Ham Biscuits, I do some cleaning, a special guest arrives, Titus and Jacob give a horse shoeing demonstration at a school, and we make a Texas Lasagna for supper!

Texas Lasagna Recipe:

Ingredients:
2 pounds ground beef
1 onion, chopped
2 cups salsa
1 packet taco seasoning
1 15 oz can diced tomatoes
1 4oz can diced green chiles
2 15 oz containers ricotta cheese
2 eggs
16 oz shredded cheese, I used Colby Jack and Pepper Jack
white corn tortillas, around 10

Directions:
Cook ground beef with onion until beef is done, drain. Add salsa, taco seasoning, dieced tomatoes, and green chiles. In a bowl mix together the ricotta cheese and two eggs. Spray a 9X13 casserole dish. Layer the meat mixture, tortillas, ricotta mixture, and shredded cheese. Bake at 350 for 30 minutes.
Serve with toppings and tortilla chips!

Buttermilk Biscuit Recipe:
2 cups self rising flour
6 TB unsalted butter (cold)
1 cup buttermilk

Directions:
Preheat oven to 350°
Combine all ingredients and mix by hand, using a little self rising flour to keep it from sticking to your hands too much. Pinch of pieces a little bigger than a golf ball and roll into ball shape. Pat in extra flour and press slightly onto baking pan.
Bake in preheated oven for 10-15 minutes, until bottoms of biscuits are browned. Brown the tops and spread with butter!
