This Dan Bing recipe is crispy style instead of the traditional ones with more soft and chewy texture. I tried many times to find the best taste. In the video, a mixer is used to knead the dough, but the egg roll (dan bing) dough is very easy to knead by hand quickly, so it can be done without a machine. The egg roll (dan bing) is unlikely to fail. After adding eggs and drizzling with soy sauce, it will be wiped out instantly!

4 serving
200 g all purpose flour
3 g salt
110 g boiling water
25 g cold water
10 g vegetable oil
Chinese Roux
30 g lard/lard
45 g cake flour/ cake flour
Common Filling besides egg: scallion, corn, cheese, canned tuna, meat floss
Right amount of sweet, thick soy sauce drizzle on the egg roll (dan bing)
