Dark brown sugar 120 grams, 0:50,
Water about 230 grams, 0:52,
High-protein flour 300 grams, 3:12,
Yeast 4 grams, 3:17,
Water about 150 grams, 3:20,
Brown sugar 120 grams, 3:44,
Flour 20 grams 3:48,
• When make the cracking steamed buns, as the dark brown sugar is abit moist, we need to adjust the amount of water properly.The dough can't be too soft or else it won't crack.
• If we ferment it before steam it, put it in pot after the water is boiled, start timing and steam it for about 25 mins.
• If we don't ferment it before steam it, put it in pot when the water is still cold, after the water is boiled, start timing and steam it for about 25 mins.
