Tuscan Turkey Potato Chowder
*INGREDIENTS*
- 4 leeks (about 2 cups)
- 4 garlic cloves
- 1 tbsp olive oil
- 2 lbs white potatoes (Yukon golds work well)
- 1 tbsp Italian seasoning
- 1 tsp pepper flakes
- Pinch of salt
- 8 cups chicken bone broth
- ¼ cup nutritional yeast
- 3 cups kale
- 1 lb ground turkey/ or four turkey sausages, ground

*ASSEMBLE*
1. Cut the ends off the leeks and then cut them in half lengthwise. Wash them under the faucet, ensuring you get under the layers to remove any dirt. Finely mince the garlic.

2. Heat the oil in a large stockpot over medium heat. Add the leeks and garlic. Cook for 2 - 3 minutes until the leeks have softened.

3. While the leeks are cooking, add the ground turkey to the pot. Break it up with a spoon and cook until it's browned and cooked through, about 5-7 minutes.

4. Cube the potatoes, leaving the skins on. No need to peel them!

5. Add the cubed potatoes, Italian seasoning, pepper flakes, and salt to the pot with the cooked turkey. Cook for an additional 1 - 2 minutes, stirring to combine.

6. Pour in the vegetable broth and bring the soup to a boil. Once boiling, cover the pot and reduce the heat to a simmer. Cook for 20 - 30 minutes or until the potatoes are tender.

7. Stir in the nutritional yeast and kale and cook until the kale wilts.

8. Taste the soup and adjust the seasoning if necessary, adding more salt or seasonings as needed.
