Almond cream is a versatile filling that is often used in tarts, croissants and Danish. When baked, almond cream has a rich almond flavor with a hint of rum, and a tender cake-like texture. The main ingredients are butter, sugar, eggs, almond meal, flour and rum. The preparation follows the standard creaming method using a mixing bowl with a paddle attachment. In the refrigerator, almond cream can be kept for up to 5 days. It can be kept in the freezer for up to 3 months, because of its high sugar and fat content. Be sure to bake through almond cream in any application, because of raw eggs contained in the cream.
