I think we all have one of those days when we crave something crunchy that will hit the spot. This is my go to recipe when i want something easy and delicious, i guess my mom prepared it alot for us growing up for the same reasons. I prepare these flautas often and just change the filling around some and change the flavor to a whole new level. I love siding my flautas with refried beans topped with freshly grated sharp cheddar cheese because it melts in the beans, and it just doesn't get better than that. Since i prepare these often I'm able to leave the grated mozzarella ( or any melting cheese) that can be added to the meat and potato filling out, but if you think the filling will crumble and fall out on you when frying then go ahead and add it because it'll work like a glue and it'll also be delicious in the filling. INGREDIENTS ________
1 lb. 80/20 ground beef
3 medium potatoes (cubed)
1/2 medium chopped onion
2-2 1/2 tsp Seasoned Salt
   • Homemade Seasoned Salt // Never buy i...  
1/2 tsp ground cumin
1 lrg minced garlic clove
1 large diced Roma tomato
1 1/2 C freshly grated Mozzarella cheese in meat filling (will keep filling together)
1 1/2 C. Canola oil for frying
Corn tortillas as needed

EXTRAS FOR TOPPING ________
Guacamole or crushed avocado
Queso fresco as needed
Chopped lettuce
Refried Beans
Charp Cheddar as needed to top beans
Mexican crema as needed
