200g all purpose flour
200g water
4g active dry yeast

550 bread flour
13g salt
100g sugar
5g active dry yeast
250g eggs
120g whole fat milk
150g sourdough starter
400g poolish
170g unsalted butter
Egg wash
1 egg yolk with 1 tsp milk
For the apple filling
7 apples (I like to use combination of different varieties)
