Advice ,Techniques for making Vietnamese baguettes

1. I use all-purpose flour with 9% protein.

5. Before baking, preheat the oven for at least 15 minutes.
6. Water tray Put 3 cups of hot water (750 ml) in the tray from the start of the oven.
7. Spray water on the dough surface before cutting. Helps to cut easily
8. Cutting the face of the dough It should be cut long once, not cut repeatedly.
9. Cool water spray in the oven and skin the dough before baking to help crisp the crust (cold water technique is my personal technique)
10. The second break is very important. If resting until overproof (press and collapse, not bounce back when slitting will wrinkle and when baked it will be flat . A little underproof but not overproof)
11. Baking Temperature used to bake depends on the size of the oven of each house. Can be used from 210-250° C.
12. After baking for 8 minutes, remove the water tray and turn the heat down to 200° C. If you are afraid of the color dark, cover the bread with Aluminium foil and bake. Duration will be 13-14 minutes.
13. Baking time depends on the molded size.
14. This recipe with eggs will darken faster than the recipe without eggs.

● Sugar 10 g.
● Instant yeast. 1/2 tsp.
