I love shopping in wet market, but news report that mice run on top of fresh pork in wet market, a bit scary. I tried frozen spareribs, no way... but totally accept chilled spareribs.

Step 1
Wash spareribs, dice red chilies, prepare black bean and garlic sauce.

Step 2
Marinate spareribs with light soy sauce, dark soy sauce, white pepper, sugar and broth.

Step 3
Pour oil in heated wok, stir fry black bean and garlic sauce until aromatic, add small amount
broth to separate sauce, set aside.

Step 4
Combine black bean and garlic sauce with spareribs, add cornstarch and sesame oil and mix
well, put into steaming plate, add diced red chilies on top.

Step 5
Cover with aluminum foil and steam 10-12 minutes.
