-------------------------------------- MOJO MARINATED BBQ PORK -------------------------------------------------
1 pork butt (3-4 lbs)
8 cloves garlic, minced
2 tsp cumin
2 tsp black pepper
1/4 cup minced oregano
1/2 cup orange juice
1/4 cup lime juice
1/4 cup olive oil

Mix all ingredients. Reserve half of the marinade to use later. Before putting the pork butt in the marinade, cover the pork lightly with kosher salt. Place the pork in the marinade for 2 hours or up to 24 hours before cooking.
When it's time to cook, remove the pork from the marinade and place in a small aluminum pan and cover with foil. Be sure not to crimp the foil together too tightly as you want to allow the air to circulate.

Setup your grill for indirect cooking, medium high heat 250 -300 degrees. Place the foiled pork on the grill opposite the coals and cook for 2-3 hours (approx half of the total cooking time). After a few hours, remove the foil but leave the pork in the aluminum pan. Continue to cook indirect until the pork is probe tender (195-200 degrees), basting with drippings every 30 minutes. To finish, remove pork from braise and let rest for up to a half hour. Save the drippings! When ready to serve, slice (or pull) the pork. Add 1 cup of the drippings to the reserved marinade and mix in 1/4 cup minced cilantro and 3 tbsp minced oregano. Mix with pork and serve.
