SIMPLE PORK GRILLED PORK TENDERLOIN

We highly recommend using a brine. Dissolve 4 tbsp kosher salt in 6 cups water. Place tenderloin in the brine and refrigerate for three hours.
After the brine, remove the tenderloin and pat dry with paper towels. Brush lightly with olive oil and season with your favorite rub or seasoning blend. Set back in the fridge until it's time to cook.

Fire up your charcoal grill for indirect cooking - fire on one side, meat on the other. Cooking temp isn't too important, but anywhere from 250-350 degrees is just fine. When the coals are ready, add a chunk or two of your favorite smoking wood. We used pecan. Cover grill and give time to let the smoke clear up and grill come up to temp, approx 10 minutes.
When the grill is warmed up and ready, place the tenderloin on the cooking grate opposite the coals. Cover grill and smoke the tenderloin until internal temp reaches 115-118 degrees, approx 20 minutes depending on your grill temp. When the tenderloin has hit 115-118 and is ready to sear, leave the lid off your grill and give some time for the coals to get hot again. They will need to get going again to get a proper sear. When the coals are ready, sear the tenderloin over direct heat, turning every 30 seconds to sear all of the tenderloin. When the internal temps reaches 140, remove the tenderloin from the grill and let rest for 5 minutes. Slice, serve and enjoy!
