Traditional hakka qiba (glutinous rice ball) is made from glutinous rice flour, sesame seeds and peanuts. Simple as it may seem, the rice balls owe their soft and chewy texture to the fresh ingredients. Another tip is to savour them as soon as they are served as the sugar in the filling will dry and harden the glutinous rice wrappers. Never keep them overnight.
