Making green jackfruit curry - new superfood meat substitute we have been eating for years!

Jackfruit has emerged as one of the new superfoods, but, like with so many other emerging superfoods, we used to eat this when it was in season almost as a staple. With time and changing diets jackfruit did become less popular - why eat a meat substitute when you can eat meat and its easier to prepare - but it is slowly becoming more popular as now as well!
Ingredients:
1/2 the jackfruit (will serve 8-10 people)

To boil:
1 tsp rough salt
1/2 tsp hurdee powder (tumeric)
1/4 cup oil

For braising:
2 med onions, sliced
3 med tomatoes, chopped
1/2 cup oil
1 tsp crushed ginger and garlic
fresh thyme
handful of curry leaves
2 tbs mixed masala
1 tsp hurdee powder (tumeric)
1 tsp mustard seeds
1 tsp jeera (cumin) seeds
1 tsp somph (fennel) seeds
1/2 tsp methi (fenugreek) seeds
1 tsp dhania (coriander) seeds
1/2 tsp elaichi (cardamom) powder
2 cinnamon sticks
1 tsp rough salt (to taste)

Serve with hot roti or puri
